Boxholm dairy: Pouring of curd
People have been making cheese in the small town of Boxholm since the 1890's. The current dairy was built in 1939. In 1952, Sweden’s very first cream cheese was made at the dairy in Boxholm.
This was an independent dairy up until 2011 when Arla Foods bought it. Arla is a large producer of dairy products in Scandinavia. In 2018, Arla decided to move the production of Boxholms Ost away from the town of Boxholm. A decision that created many protests and will mean a loss of cultural identity for Boxholm.
This is the process where the curd is poured into containers for storage. In these containers, the curd is pressed into compact cheese.
